Food That Fuels - A High Energy Meal for Anytime of Day!

When I was pregnant with our last baby and since he was born (he's 7 months now) I have had this addiction to eggs. Mostly because I find them easy to digest and they don't cause me any stomach problems or cause our baby any problems while pregnant or nursing. I also love that eggs are a great natural form of protein and amino acids, they give you great energy and are quick and easy to prepare. I have many different go-to ways to prepare my eggs, but this receipe was new to me - and now I'm hooked!

SWEET POTATO HASH & EGGS

Did I mention this recipe is super easy? 

  • Grate about 3/4 of a cup of potato (you can use sweet potato or regular white potatoes) into a greased frying pan
  • Sauté till tender (about 5 minutes- over medium heat). Then fry egg leave yolk soft. 
  • Place egg over potatoes - break yolk open & ENJOY!!!

A healthy, energy filled, any time of day meal to try this week!  (And yes my kids love it too!)
