A new take on pizza....for breakfast!

At LifeWell4Life we love to try new foods together, especially at our staff meetings.  I recently tried this breakfast pizza for our morning staff meeting and it was gone very quickly.  Then tried it with our family and same thing!  It is super easy, light tasting, all in one dish to try for your next breakfast feast.

INGREDIENTS:

  • 5 medium size potatoes, cooked and shredded (I used some left over baked potatoes we had)
  • 8 eggs
  • 1/2 cup milk
  • 1 cup grated cheese
  • Any other toppings you want like ham, bacon, onions, mushrooms, peppers, etc.

Take a baking or pizza sheet and grease pan.  Spread grated potatoes on bottom of pan to form the crust.  Bake in 375 oven for about 20 minutes, till outside of potatoes turning golden brown. 

While baking- cook scrambled eggs mixing milk and eggs together and frying in pan.  Grate cheese and prepare any other topping you would like to use.

When potatoes are done, remove from oven and spread scrambled eggs on top.  Then add any other toppings, followed by the cheese. Place in oven under broiler until toppings are soft and cheese is melted.   

Cut like a pizza and enjoy.  (Please note that both times I have made this the potatoes did not really form a crust - but we liked it like this)
