Soup's On! A Favourite Recipe That Will Warm Your Belly

All this winter weather has me thinking about making soup again.  There is something about a delicious soup and a cold day that warms you and brings a smile to your face.  Below is the recipe of my favourite soup.   • 2 tsp olive oil or butter
  • 1 cup chopped onions
  • 1 tsp garlic
  • 1 tbsp grated ginger root
  • 1 tsp curry
  • 1/2 tsp cumin
  • 4 cups chicken or vegetable broth
  • 3 cups peeled and cubed butternut squash
  • 2 cups peeled and chopped pears or apples
  • 1 cup peeled and chopped carrots
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3/4 cup milk 

In a large pot cook onions in oil or butter. Once onions are soft add rest of ingredients to pot, except milk.  ( Note- vegetables don't need to look perfect - it is all going to get blended - just chop to cook faster.). Bring pot to boil, then cook on medium low heat until veggies are soft.  Remove from heat and place in blender to purΓ©e to desire consistency.  Once blended place back in pot and bring to a slight boil again, adding milk, stirring the whole time - turn heat back to low - and it is ready to eat!  Add more spice if you desire - or hot sauce at the end for an extra little kick.
